This wine is original from Longobards.
It was produced in the past in Marche and Umbria, such as Piceno lands, Macerata, Foligno, etc.
The cherry wine was used to make more robust and pleasing wines rich in tannin such Verdicchio and Rosso Conero.
It was offered to the "fair sex" (women) for its perfumes and its smoothness.
It is a very rare, precious and meditation wine and here we propose a recipe to produce this elixir, handcrafted home made from ruby red color, intense aroma of cherry, blackberry and raspberry, smooth taste, slightly crisp in the first years of life.
In July, the cherries are harvested and mixed with sugar at this dose: about 1 kg. of cherries and 600 to 750 grams of sugar.
After a month of fermentation in glass containers at the sun (these jars are fine for 2 or more liters, with airtight containers), the wine shall be placed in the dark.
When will come the harvest period, for every kg of cherries is added liter of must (red or white). Leave the juice to ferment and the cherries together until February, and finally remove the cherries and filter the wine, taste and see the result.
